The push is driven in large part by cruise lines striving to get new passengers aboard. “Everybody cares about good food and trendy restaurants,” says Mary Jean Tully, a travel specialist who’s been watching the cruise industry for more than 30 years. “But they also want an authentic experience, something their friends haven’t done.”

If a big-name chef floats his boat, dad may appreciate the Oceania experience. Megawatt French chef Jacques Pépin, who’s won several Daytime Emmy Awards for his various television cooking programs, oversees all culinary offerings aboard the cruise line’s six vessels.

These include: the Polo Grill, serving steakhouse favorites like a 28-day dry-aged steak and grilled swordfish, and Toscana, the Tuscan charmer serving Italian recipes, many sourced from the staff's own families. This year, Oceania is offering a specially dedicated Jacques Pépin cruise—sailing from Amsterdam to Lisbon—with custom menus, culinary lectures and demonstrations, and food-and-wine excursions.

Oceania Cruises take their food seriously. In fact dining is always a highlight of any voyage. So what makes the food onboard these luxurious cruise ships so good? According to Viktor Malek, the Executive Chef on Oceania’s Regatta it’s all about freshness and passion.

“Fresh and simple, that’s key. As well as a great team who are motivated and passionate about what they do. That’s our recipe for success”, he told me.

The boutique-sized Regatta, Insignia, Sirena and Nautica each have four restaurants, including Toscana which serves highly rated Italian cuisine as well as an up-market steakhouse called Polo Grill. Oceania Cruises larger ships, Riviera and Marina, have additional dining venues as well. There is the pan-Asian restaurant called Red Ginger, plus Jacques which serves delightful French cuisine.

Oceania Cruises’ Insignia is the first of the lines four R-class ships to undergo an incredible bow-to-stern refurbishment as part of a US$100 million initiative dubbed OceaniaNEXT.

The multi-million-dollar transformation was unveiled in Sydney, Australia, to an exclusive audience where guests including The CEO Magazine were taken on a guided tour and enjoyed a delectable four-course lunch aboard the fresh-faced ship.
